Spring Meal Planning Tips

Here’s a few things that can be helpful for meal planning in the Spring:

  • Make your meals around seasonal produce – this is particularly helpful for clean eating on a budget.
  • Keep it fresh – the less cooking the better, right Mama? And, meals made with fresh ingredients also pack more nutrition.
  • Look for quick and easy – Spring is a busy time for events and outdoor activities. Plan meals that require little prep and attention while cooking. Salads, crockpot meals, and air fryer recipes are some of my favorites for Spring.

Spring Drink Ideas

When you are getting started with clean eating, it’s a good idea to include healthy drinks in your Spring meal plan so that you have clean options to enjoy. It’s also nice to have some Spring drink ideas to serve for parties and get-togethers.

1 – Healthy Iced Tea Recipes – this collection of iced tea recipes all include fruit and are low in sugar.

2 – This bellini peach raspberry iced tea is a copycat version of the famous Olive Garden recipe. Easy to make at home and just as delicious as the original, you will love this refreshing spring iced tea!

3 – Watermelon Electrolyte Drink – this homemade electrolyte drink is a favorite refreshing beverage as the weather warms up. Great for late Spring when watermelons come into season!

Meal Ideas for Spring

These recipes make perfect Spring dinners or lunches for Spring.

1- Niçoise salad – this timeless French dish hailing from Nice on the French Riviera stands out as the quintessential salad for spring. It blends an array of both fresh and cooked elements. With ingredients such as tuna, hard-boiled eggs, tomatoes, green beans, lettuce, and boiled potatoes, all brought together with a zesty lemon dressing. It’s a favorite for a hearty, yet light lunch.

2 – Chicken Shawarma Bowls – we adore this fresh and bright recipe! Chicken shawarma is filled with amazing flavors, and each person can fill their bowls with all of their favorite veggies! Great for meal prep lunches too.

3- Cilantro Lime Veggie Pasta Salad – This is my favorite pasta salad because the cilantro lime dressing gives it a fresh, vibrant flavor. The feta takes it over the top. It’s great to make ahead and eat all week or take on a picnic.

4 – Spring Lemon Orzo Pasta Salad – is packed with fresh flavors from roasted asparagus, peppery radish, fresh lemon juice, feta cheese, and tons of herbs. It’s perfect as a side dish or you can serve it as a main.

5 – Beet Goat Cheese Salad – This goat cheese salad is a lovely light Spring meal! The “fried” goat’s cheese makes this a simply divine lunch option. Just add your choice of protein if you so desire.

6- Asparagus Mushroom Gluten Free Quiche – Nothing says spring like this light and healthy quiche with asparagus and mushroom. With no crust to make, it’s also naturally gluten free! And the leftovers make a great quick lunch.

7 – Vegan Soba Noodle Salad

8 – Fenugreek Grilled Chicken Thighs – a simple, yet flavorful recipe that is great for tossing on the grill then using for meal prep or quick weeknight dinners.

9 – Lemon Chicken with Asparagus – asparagus is one of the first spring harvests and it’s delicious in this easy dinner recipe! This lemon chicken recipe is so fresh, light, and easy to make.

10 – Spring green pasta – is made with asparagus, peas, leek, pumpkin seeds, and homemade vegan pesto sauce. This incredibly quick and easy meal is fresh and clean and perfect for spring! Add chicken or shrimp for a boost of protein.

11 – Spring Salmon Bowl – a fresh, vibrant dinner recipe perfect for springtime! These Spring Salmon Bowls with asparagus and peas celebrate spring produce and are a nutritious low-carb meal.

12 – Greek Artichoke Stew – A very light and lemony dish with succulent, creamy sauce, topped with dill and served with crispy, homemade bread, olives, and feta cheese. It is the Greek Mediterranean way: seasonal, healthy, and delicious food.

Side Dish Ideas for Spring

Don’t forget the side dishes! With all the fresh produce available in the Spring this is a great time to try out new side dish ideas and get your family to eat more veggies.

1- Air Fryer Asparagus Fries – Asparagus is our favorite spring vegetable, and these asparagus fries are crispy-coated, but cooked to a perfect tender-crisp in the air fryer. They are a delicious and additive side dish, appetizer, or snack.

2- Sauteed Asparagus and Mushrooms – this side dish could not be easier – toss in the pan and saute! It’s simple enough to serve on busy weeknights, and the white wine butter sauce makes it fancy enough to serve for Easter or any special occasion.

3 – Edamame and Corn salad – is vibrant, fresh, and loaded with flavorful ingredients like juicy tomatoes, sweet corn, and edamame. You can even top it with grilled chicken or shrimp for an extra protein boost. It’s also a good one to take to pot luck dinners.

4 – Caramelized Lemon Orzo Salad – This fast and easy salad makes the perfect side dish when the weather warms up! With a quick and flavorful Caramelized Lemon dressing, and plenty of veggies, cubed mozzarella, and chickpeas! This simple Orzo salad recipe is ready to go in a flash any night of the week!

5 – Stuffed tomatoes – are perfect for a spring side dish or light vegetarian meal. They’re filled with rice, herbs, Parmesan cheese, and breadcrumbs.
